Every morning, Matt and Claire prepare and serve breakfast themselves. It is the part of the day they enjoy most: time to chat, hear your plans, and pass on local knowledge that only someone who lives in Weymouth would think to share.

Everything is cooked fresh that morning, with pride and high-quality ingredients. For many of our guests, it is one of the main reasons they keep coming back to Trillberry, year after year.

Chief cook at sea: meet your breakfast chef

Matt joined his first ship in Portland at sixteen and rose to Royal Fleet Auxiliary Chief Cook, feeding ships' companies three times a day, from troop ships to task groups around the world. He was selected for the British military culinary arts team, represented the UK in competitions worldwide, and won gold at the Culinary World Cup.

At Trillberry it's quieter by design: cooking for up to sixteen guests a day compared to 600 or more when he was at sea. But the standards he maintains and his passion for cooking remain the same as his time on board busy ships travelling the world.
